I think some did but I also believe that some of the items we carry around are a little far fetched at times.

I think some of the things that were not carried with them were all the weapons.   Somehow I do not see them carring all the premade stones or spears for the seige engines.  I believe a lot of that was harvested on the spot.

Keep in mind that usually any siege weapon had a lot of men behind it. In fact many armies of men so there was lots of help around.

Yes I know that.  They took a mass of engineers with them to the field so they could build the nessarry items to break into a castle.

Yes seige engines were most often built on the spot.  How would you haul that thing through a swamp or though a forest?

I think even the Armour most adventures wear is far better then any that would have been used.  No Armour to leather would be the major rule.  Only  night or high noble would have been wearing any iron based products.    Shield of wood banded with steel would likely be an officer.   I think if you could not make it you likely would not have it.  Thus the mace of wood or pure wood arrows would have been common.  Swords of good steel would have been a prize to cherish. 

Common adventures would not have steel like the imperial armies just due to cost.
